Natures First, Agar agar powder is a gelatinous substance derived from red algae. Know in Japan as Kanten. This vegetarian thickening agent can be used as a substitute for any recipe that uses gelatine. Especially popular in dairy free and vegan recipes. Agar agar sets slightly more firmly than gelatine, this allows it to set at room temperature. It can be used as a 1:1 replacement for gelatine powder in a recipe, or in place of egg whites. Try making cucumber jelly or soy sauce gel to serve slightly warmed with savoury dishes, you can be really creative with the versatility of agar.
